Weekly meal plan for week of 12/16
Here's my menu for the week starting December 16. Feel free share your meal plan for the week or the day.
Keep in mind that I am usually only cooking for 1 or 2 people most nights and I eat a primarily pescatarian diet that leans heavily towards the vegetarian side. When there are leftovers from dinner, I usually have them for lunch the next day.
Faye's Meal Plan for the week:
* Shrimp fajitas with rice
The frozen shrimp, red peppers, & avocado (.39 each through 12/17!) came from Aldi.
The onion and lettuce are from Harris Teeter ($1 organic spinach blend from Organicgirl with BOGO sale through 12/17 and coupon from the Organicgirl website).
The rest of the ingredients I already had on hand from previous sales (tortillas, cheese, brown rice, salsa). Flour and corn tortillas are on sale BOGO this week at Harris Teeter and are a super deal.
* Homemade veggie soup I made last week. I froze a couple servings to have this week. I'll add some whole grain penne pasta to the soup.
* Veggie burgers & cheese on onion rolls with avocados, lettuce, tomato, light mayo. Side of sweet potato fries (Harris Teeter brand for $2.49/bag in the freezer section).
* Baked parmesan tilapia, salad
* Egg salad on a salad (using the $0.49 eggs from Aldi on sale through 12/17 - that is such an excellent price for eggs!)
