On cool fall days, there's nothing like a big bowl of warm soup waiting for you when you get home.

And when it's in the slow cooker, it is literally waiting for you and ready to eat. This one is especially yummy.

Slow Cooker Chicken Tortellini Soup

Adapted from The Recipe Critic

1½ pounds boneless chicken breast
3 medium carrots, peeled and diced
3 stalks celery, diced
1 medium onion, diced
5 cloves garlic, minced
8 cups low sodium chicken broth
2 bay leaves
1 teaspoon Italian seasoning
2 cups fresh cheese tortellini
2 cups fresh spinach
salt and pepper to taste

In your slow cooker, put all of the ingredients in except the tortellini and spinach. Cook on low for 6 hours. Once it's cooked, remove the chicken and shred it. Put it back in the slow cooker with the tortellini and spinach. Cover and cook for another 15 minutes until the tortellini is cooked through.

I served it with some bread and salad on the side.
