Holiday Recipe: Lemon bars

This recipe for lemon bars was a go-to when I was a child, and remains a favorite in my house today.

Most of the Christmas cookies I ate as a kid were made by the mom's of my own mother's elementary school students. She was a school teacher, and on top of the mugs, ornaments and other brick-a-brack she would receive from her students each year were tins and tins of homemade cookies. But she made a few of her own too. This recipe for lemon bars was a go-to when I was a child, and remains a favorite in my house today.

Lemon Bars

1 cup butter, softened
1/2 cup powdered sugar
2 cups flour
4 eggs, beaten
2 cups granulated sugar
1/2 cup lemon juice
5 tablespoons flour
1 teaspoon baking powder

Spray nonstick spray in a 9x13 pan. Preheat the oven to 350 degrees.

In a bowl, beat the butter, powdered sugar and two cups of flour together until it's smooth. Spread the mixture in the pan. Bake for 20 minutes.

While the crust is baking, beat together the eggs, granulated sugar, lemon juice, 5 tablespoons of flour and baking powder until it is well blended. The mixture will be thin (and that's totally fine!).

Pour the mixture over the baked crust and continue to bake the bars at 350 degrees for another 25 minutes.

Sprinkle the finished product with powdered sugar. Let it cool before cutting into bars. The bars will feature a delicious buttery crust with a gooey lemon layer.
