Bean Salsa

1 15-ounce can black beans, drained
1 15-ounce can sweet corn, drained
1 15-ounce can diced tomatoes, drained
1/2 yellow onion, diced
1/4 teaspoon ground red pepper
1/2 teaspoon garlic powder
1/4 teaspoon cumin
Salt and pepper to taste
1 tablespoon lemon juice
2 tablespoons cilantro, chopped

In a medium bowl, mix all of the ingredients together. Serve stuffed in an avocado or with chips or on salad greens.

Fruit S'mores

Your favorite fruit such as bananas and strawberries, chopped up in bite-sized pieces
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
1/4 cup dark chocolate chips
1/4 cup mini marshmallows

Preheat the grill on medium heat. Sprinkle fruit with cinnamon and salt. Place in the center of aluminum foil. Mix in chocolate chips and marshmallows. Fold in the sides of the aluminum foil until it forms a closed packet. Grill until the chocolate and marshmallows melt to your liking.

Grilled Mini Pizzas

4 pitas
1 cup tomato sauce
1 cup Parmesan cheese, freshly shredded
Toppings: Think vegetables such as onions or peppers, herbs such as basil or oregano and shelf-stable pepperoni

Preheat grill on medium. Grill each pita on one side until toasted. Remove. On the toasted side of each pita, spread about 1/4 cup of tomato sauce. Sprinkle each pita with Parmesan cheese. Add toppings. Grill until the cheese melts and/or the pita is toasted.

Strawberries and Cream

Buttery crackers, such as Ritz
Cream cheese, softened
Strawberries, halved
Honey, for drizzling

Spread or pipe some cream cheese onto a cracker. Top with a strawberry half. Drizzle with honey and serve.

Grilled Fajita Packs

Favorite protein cut into bite-sized pieces
1/2 red bell pepper, sliced into strips
1/2 yellow onion, sliced into strips
1 tablespoon olive oil
Salt and pepper, to taste
1/2 tablespoon lemon juice
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon ground red pepper

Preheat the grill on high hit. Combine all of the ingredients in a mixing bowl. Mix well. On one piece of foil, spread ingredients in a single layer in the center of the foil. Place the other sheet on top. Crimp the sides so it forms a packet. Grill for about six minutes. Carefully flip the packet using the tongs. Grill for an additional six minutes. It's ready when the protein is fully cooked. Be careful when opening the packet as it will be hot.
