Christmas Cookie Recipes: 3 ingredient white chocolate Oreo truffles
No, not all of our Christmas cookie recipes this year in our holiday treat series will require just three ingredients. But, generally, they're all going to be pretty simple. Because here's where I'm coming from: Why put more stress during a time of year that's already pretty stressful? And over cookies!?
This recipe, inspired by recipes like it all over the internet, requires time in the refrigerator, but not your oven.
3 Ingredient White Chocolate Oreo Truffles
36 Oreo cookies, which is essentially an entire package of Oreos. You can use whatever flavor you like, but we go with the traditional chocolate with vanilla filling
8 ounces of cream cheese
16 ounces of white chocolate, melted
Put the Oreos in a food processor and process them until they are ground. You also could put them in a plastic bag and use a rolling pin to crush them up.
Mix the Oreo grounds and cream cheese together in a bowl. Put the mixture in the refrigerator for an hour, so it's easier and less messy to roll them into balls. Then, take the dough, and roll them into 1 inch balls. Put them on a baking sheet lined with foil or parchment paper and put them in the freezer this time. It will make them easier to dip into the white chocolate.
Just before you pull the balls out of the freezer, melt your white chocolate, according to the package. Then dip the balls into the melted white chocolate and place each one back on the cookie sheet. I use a fork and spatula to get the job done. Put the balls back in the fridge, so they can set. That should take about 10 minutes. Store these in the refrigerator until you're ready to partake.
