It doesn't really get much easier than this!

Val Creager with the Apex Farmers' Market shares this recipe that takes advantage of two things that are exploding in local gardens and farms - tomatoes and cucumbers.

It also just happens to feature the colors red and green. That's a nod to a special event the market has this weekend - Christmas in July. It's 8:30 a.m. to 12:30 p.m., Saturday, at the market at 220 N. Salem St.

Santa, decked out for summer, will be there for photos. There also will be Christmas decor, Christmas-themed inflatables, live music, food trucks and crafts. It's free.

You also can pick up the fresh produce needed for this recipe (along with lots of other goodies). Creager tells me that she has sampled this recipe in the market's Ambassador Tent and people loved it for both the simplicity and the flavor.

Summer In A Cup
Diced cucumbers and tomatoes
Olive Oil and Herb Vinegar (or your choice of flavored vinegar) to taste in about a 1:1 ratio

Salt and Pepper to taste

That's it! In individual serving cups, mix the ingredients together together and let it sit for a couple of hours in the refrigerator. Then, pull it out and enjoy. And, don't forget: It's acceptable (and maybe even required), to drink the "juice!"
