I love finding a new recipe for a great side dish where the focus is on flavor and fresh vegetables.

This dish, inspired by a recipe found on Lemon Tree Dwelling, fits both of those bills - and is so easy too.

Roasted Parmesan Green Beans

1 pound green beans, fresh
2 tablespoons olive oil
2 tablespoons grated Parmesan
2 tablespoons Panko breadcrumbs
1/2 teaspoon salt

1 to 2 cloves of garlic, minced

Preheat your oven to 400 degrees.

In a big bowl, toss the green beans together with the other ingredients.

Lay some foil on a large cookie sheet and spread the beans out so they are in an even layer.

Roast for 20 minutes - toss half way through.

These beans are yummy warm - and great the next day cold on top of a salad.
