Recipe: Pasta salad with peas

On a warm winter day the other week, I was craving a pasta salad that I usually make in the summer time. This one is a hit with my entire family.

On a warm winter day the other week, I was craving a pasta salad that I usually make in the summer time. This one is a hit with my entire family.

Pasta Salad with Peas

16 ounces of uncooked small pasta shells
4 cups frozen peas
3/4 cup chopped bell peppers, any color
1/2 cup chopped onion
1 1/3 cups mayonnaise
2 tablespoons white balsamic vinegar or just white vinegar
2 teaspoons dried basil
2 teaspoons spicy brown mustard

Salt and pepper, to taste

Cook the pasta according to the box. You can either cook the peas by dumping them in the boiling pasta water during the last couple of minutes of cooking time or by just warming them up in the microwave, according to the package instructions.

Once the pasta and peas are done cooking, drain them and rinse in cool water.

In a small bowl, combine the mayonnaise, vinegar, basil, mustard and salt and pepper. Mix it all together.

Put the pasta and veggies in a large bowl and toss with the mayonnaise mixture until it's fully incorporated.

Cover and put in the refrigerator for at least an hour (though this one is great the next day or two and perfect for lunches).

And, yes, a picture of the salad did pop up in the corner of the recipe for honey mustard chicken breasts that I shared last week. It's a great pairing!
