pumpkin nut bread

Pumpkin Nut Bread
Mix:
1 cup oil
4 eggs
3 cups sugar
2 cups pumpkin
1/2 cup water
Add:
2 teaspoons of baking soda
1 1/2 teaspoons of salt
1 Tablespoon of cinnamon (I add more cuz I like cinnamon)
mix well and add:
3 1/2 cups of flour
then add:
1 cup of pecans
(you can substitute raisins or dates for nuts)
I spray loaf pans with cooking spray... This makes 3 loaves.
Divide the mixture between the three loaf pans (each will be approx 2/3 full)
Bake at 350 for 1hr and 15 min. When cool wrap in plastic wrap. This freezes well. I love this served warm with a little margarine....YUM!
