beer can chicken
Published Jun. 30, 2008ummmmmmmmmmmmmmmmmmmmmmmm...Can't say that enough! For those of you who have tried it, you know what I mean. For those of you who haven't, you have NO idea what you are missing. I made this for my boys this weekend, and needless to say, they wolfed down 3 whole chickens and want to know when I am cooking it again.
Here's my favorite dry rub recipe:
This is for 3 Whole chickens...
1/2 cup brown sugar 1/2 cup KOSHER or SEA salt
1/4 cup paprika cumin, ginger and FRESH chopped basil(to taste)
1/2 beer ( I usually stuff the chicken with a lemon, and the neck with an onion. Then pour the extra rub into the beer.) I also usually put some kind of bouquet garni in the beer..this is basically just a cluster of fresh herbs (thyme, oregano, basil, tarragon, rosemary)
Sit the chicken on the beer and let 'er rip for about an hour at 350 degrees on your grill. Let the chicken get golden brown and the juice runs clear, then it's done. Let sit for a few minutes before removing and BE CAREFUL!!! Then, you too, shall believe in a higher power...
And don't forget to clean out the chicken beforehand, inside and out, pat dry and rub with olive oil...before all the above.
